Stark Herdwicks is a small flock of purebred Herdwick Sheep reared in the heart of North Norfolk.
Breeding Herdwick Sheep since 2017, my prize winning flock regularly attend agricultural shows and have been lucky enough to win many prizes.
The name Herdwyck is recorded in documents dating back to the 6th century and refers to sheep pasture. Local folklore links Herdwick to the Vikings, whose presence influenced the culture and language and quite possibly farming practices. Such stories complement the romanticism the breed inspires, winning the affection and support of both Mrs Heelis (Beatrix Potter) and HRH The former Prince of Wales.
Herdwick's have a hardy demeanour and gain weight slowly on naturally foraged food. Hogget is sheep meat between 1-2 years old. This is normally produced from native hill breeds as they do not fatten in time to be classed as lamb. Mutton is sheep meat over 2 years old. All of these factors alone create a meat deep and rich flavour.
Attending local farmers markets I offer hampers and single cuts. Due to being a small flock our meat is available on a seasonal basis (Easter, Summer & Winter) however if you cannot find what you are looking for please contact me and we will help when we can. Wool craft products are available all year round using the wool from our own flock. From felted soap, wool balls, peg loom rugs, bird nest feeders and gardening wool. Anything is truly possible with British wool! Plus all of our business collaborations are using and supporting British producers.
